Prawn-Stuffed Courgette Jeon (새우애호박전)

If you’re looking for a side dish that brings people together during Korean holidays or festive gatherings, Prawn-Stuffed Courgette Jeon is a perfect choice. It’s simple enough to make for a relaxed family meal, yet elegant enough to shine on a celebration table.
In many Korean homes, holidays are filled with warmth, lots of chatting, laughter, and the comforting rhythm of cooking together. Prawn-Stuffed Courgette Jeon fits beautifully into that scene. The vibrant green courgette slices, filled with savoury prawn and colourful vegetables, cook into small golden bites that tend to disappear as soon as they’re served.
This dish is especially loved for its balance of freshness and comfort. The prawn filling stays tender and flavorful, while the courgette adds a clean, light taste. Pan-fried until the outside is gently crisp and the inside soft, they pair wonderfully with other traditional holiday dishes or stand on their own as a charming party appetiser.
Whether you’re preparing a festive Korean holiday spread like Chuseok or Seollal, or simply hosting friends for a cosy gathering, Prawn-Stuffed Courgette Jeon brings a touch of homemade warmth to the table. It’s the kind of dish that invites people to gather, share, and enjoy, one comforting bite at a time.
